This delicious entrée has been adapted from a recipe featured on Dita Holifield’s “Entertaining in Paradise” TV show.
Notes
Use cornstarch and water along with the pan juices to make a complimentary Apple Butter Sauce. For a healthier alternative to store bought products, use our Apple Butter Recipe for a completely homemade ingredient to use in this recipe.
Ingredients
- 3 lbs Boneless Pork Loin
- 2 Garlic Cloves, minced
- 1/8 tsp Cayenne Pepper
- 1/8 tsp Salt
- 1/8 tsp Black Pepper
- 3 Granny Smith Apples, thinly sliced
- 2 cups 100% Apple Juice
- 1/2 cup Apple Butter
- 1/8 cup Golden Brown Sugar
- 2 tbsp. Water
- 1/4 tsp Cinnamon
- 1/4 tsp Ground Cloves
Instructions
- Preheat over to 350 degrees.
- Spread minced garlic all over pork loin, be sure to give it a good massage to thoroughly coat pork.
- Season with salt & black pepper and sear on all sides in a preheated skillet until browned.
- Place in a 9x13 baking pan.
- Pour in Apple Juice and cover pan tightly with foil.
- Bake for 30 minutes.
- While pork is roasting, mix together the apple butter, brown sugar, water and cayenne.
- After 30 minutes, remove pork from oven and spread the apple butter mixture over the pork.
- Place Apple slices over the pork.
- Cover the pan and and bake for another 20 minutes or until a thermometer probe reads 160 degrees.
