Tropical Chicken Wrap recipe courtesy of Kalihi-Palama Health Center.
Ingredients
- 1 tsp Olive Oil
- 1/2 lb chicken thighs, boneless and skinless
- 2 green or red bell peppers, seeded and chopped
- 1 med onion, peeled and sliced
- 1 tomato, diced
- 1 med lime, juiced
- 1 can (15 oz.) 50% less sodium black beans, drained and rinsed
- 2 ripe mangoes, chopped
- 1/2 cup fresh cilantro, chopped
- 1 med avocado, peeled and chopped
- 4 10-inch Whole Wheat Tortillas
Instructions
- In a nonstick pan, sauté chicken and bell peppers, & onion for 5 minutes over medium heat. Add beans, stir well.
- Reduce heat to low and simmer about 5 minutes.
- In a small bowl, combine mangos, lime juice, cilantro and avocado. Reserve 1/2 mixture for topping.
- Fill warmed tortillas with 1/4 bean mixture and 1/4 mango mixture.
- Fold ends of the tortillas and roll to create a wrap.
- Top wraps with remaining mango mixture.
